Nacho-Average Nachos
I’ve created a healthy nacho recipe that I can personally recommend to my clients who want to use healthier ingredients, avoid that calorie burden and still enjoy the foods they love.

Ingredients:

Chips:
– 4 spinach wraps
– Coconut oil spray
– Pinch of lemon pepper salt

Mince:
– 500g turkey mince
– 2 cloves of garlic
– 1 small brown onion
– 2tsp smoked paprika
– 1tsp cumin powder
– 1/2tin kidney beans
– 1/4 lemon juice
– Chilli flakes/powder (optional)

Guac:
– 1 avocado
– 1/4 red onion
– 1/4 lemon juice

Topping:
– Low fat cottage cheese
– Dusting of smoked paprika

Method:
1. Chop spinach wraps into bite size triangles, lightly coat in coconut oil and sprinkle a pinch of lemon pepper salt over the top.
2. Bake both sides of the wraps under the grill until light brown and crispy. Keep a close eye as they can burn.
3. Add 1/2tsp of coconut oil to a pan on medium heat. Add brown onion and garlic cook until brown then add turkey mince. Stir through spices smoked paprika, cumin, lemon juice and chilli (optional) then add kidney beans.
4. Smash avocado, mix diced red onion, squeeze lemon over the top and mix through.
5. Plate up with a dollop of cottage cheese and sprinkle of paprika.

Serves 4
